it's been a quick and easy food day:
- breakfast~ the French sausage and cheese stuffed waffles from the freezer (and cocoa for the little one since it was a little brisk)
- lunch~ homemade seitan marinated in walnut oil and reduced sodium soy sauce and fried in the Le Creuset skillet with some steam-in-bag spring vegetables in citrus sauce from Aldi. Once those got cooked, I mixed them into the skillet with the seitan and stir-fried everything
- post-lunch dessert~ daughter and i split a special K chocolate peanut butter bar
- planned post-school snack~ apples and graham crackers with peanut butter or cashew butter? Or just ditch the graham crackers for real cashews.
- planned dinner~ nachos with cheddar cheese, mango salsa, black olives, leftover chili, AND leftover hamburger mix from the stuffed bread from the other day
