Husband breakfasts

Yesterday for breakfast my husband made steak, eggs and homemade diced fried potatoes.

Today we have a meeting 9 a.m. to noon, so he whipped up smoothies:
- dark chocolate carnation instant breakfast
- peanut butter
- almond butter
- banana
- very vanilla soy milk
- dark chocolate almond milk

Bruschetta Ravioli

Mix:
- 2 diced tomatoes
- 1-2 teaspoons garlic powder
- about 2 tablespoons balsamic vinegar
- 1-2 tablespoons olive oil
- 2-3 teaspoons basil
- 1 teaspoon Italian seasoning
- 1 pinch minced garlic
- 1 tablespoon fresh parsley

Stir and let rest so flavors blend.

Prepare ravioli of choice.

I'm going to cook some spinach and spread that on top of the ravioli before adding bruschetta.

Top with bruschetta and sliced black olives and grated cheese if desired.

Depending on your ravioli and if you use cheese this can be vegan or vegetarian.


This might be my new favorite meal. I have to try with squash ravioli.

Vegetable wraps

Today I'm incredibly stressed out, so I didn't have a chance to eat properly. I made these at 2 pm:

A wrap
With a layer of buffalo blue cheese dip
Romaine lettuce
Cauliflower, carrots and broccoli
Some shredded cheese

Sunday hot chocolate

This still tastes a tad soymilky but here's our recipe:

- 2 cups silk unsweetened soy milk
- 1/2 cup half and half
- handful of chocolate chips
- 1/3 cup Hershey's cocoa
- 1/4 teaspoon vanilla
- 1/4 cup sugar
- 2 peppermints

Lovely breakfast scramble

My husband made this yesterday morning:

- scrambled eggs
- diced potatoes, fried, with dill
- broccoli

A great breakfast!

Sunday

I somehow volunteered to work an 8-hour shift today at Target café. I packed myself a dinner.

- single serving portion of market pantry macaroni and cheese (I had a coupon so it was free)
- minute maid lemonade juice box
And to make up for all that processed junk:
- a salad with Fresh Express very veggie salad mix, craisins, golden raisins, sliced almonds and Wegmans cherry raspberry vinaigrette

Lunch is peanut butter and blueberry jelly on Archer Farms blueberry breakfast bread

Alaskan Sockeye Salmon with herbed butter

Last night after work I spent $19 at Target. Some discounted stirfry beef, a quart of half and half, a bag of very veggie salad, blueberry breakfast bread and three Alaskan wild caught sockeye salmon fillets.

Daughter is making salmon with herbed butter (recipe on the back of the Archer Farms salmon package), red potatoes and brussel sprouts (both will probably be sautéed in the skillet with the same herbed butter).

The salmon, according to the package, should be broiled 12 to 16 minutes.

The herbed butter (enough to serve on three filets) is:
- 2 tablespoons butter, softened
- 1 tablespoon herbs (basil, chives, and/or parsley)
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- dash pepper

- the last pint of spiced peaches I canned last summer

- tuna on homemade baguette (from the freezer)

Dinner:
- unsweetened iced tea with blueberry
- Mandarin orange chicken
- broccoli, red peppers and snow peas
- rice noodles

Chicken curry in the crock pot

I didn't have all the ingredients, so I used:
- 1 can organic coconut milk
- a splash half and half
- 2 TBS curry
- 1 TBS cumin
- 1 teaspoon ginger
- 1 splash Franks Red Hot sauce
- 2 teaspoons minced garlic

- chicken
- red potatoes chopped into chunks
- 1 can sweet peas
- 1/2 bag frozen California blend

Spring ravioli

While weeding the garden today, I pulled some more of those wild onions/yard scallions/ onion grass. I also had some fresh broccoli that I needed to use.

So I whipped up some store bought cheese ravioli and developed a sauce from the following:

- 3 tablespoons olive oil
- 1 tablespoon butter
- 3 chopped cloves of wild onion
- about 3/4 teaspoon basil
- about 3 tablespoons unsweetened soy milk
- about 2 tablespoons heavy cream
- 1 tablespoon whole wheat flour

Method:
Combine butter and oil and sauté scallion pieces for about the minutes. Reduce heat, add milk and cream. Once combined add flour. Incorporate thoroughly, add basil.

Now once I had the sauce, I cooked about 2.5 cups chopped fresh broccoli briefly in the microwave. About three minutes. Then I drained it, put the sauce to the side, and sautéed the broccoli about five minutes in a teaspoon of olive oil and the sauce sticking in the pan.

I put the sauce in the ravioli pot once I cooked and drained the ravioli and added the ravioli. Stirred until thoroughly mixed (it's a thin coating) and add the broccoli.

I sprinkled about 1/4 cup grated ricotta salata on each dish after scooping out the ravioli
