Crock pot pork chops

It is never a good idea to put a good cut of meat in the crockpot. But I worked until 5:15, child had to be dance at 6, and husband had to play chauffeur to all of us.

So I browned some boneless pork chops and threw them in the crock pot with the following sauce:

- black currant juice
- mixed berry juice
- golden brown mustard
- brown sugar
- water
- fresh pears, chopped
- dried cranberries

The meat was very tasty, but dry.

Chilled Pear Apple Soup

Ah, these 100 degree days... Makes me anxious to visit Djibouti or the Sahara desert.

I had the eight-year-old prep a variant of Eileen Bresslin's vegan chilled pear soup. I say variant because I lost the recipe long ago and I added applesauce to it.

INGREDIENTS:
- 1 can pears, the big car, the 30-some ounce can. I use pears in juice, and I drain half the juice
- about two cups your favorite applesauce
- about one tablespoon or maybe slightly more lemon juice. Up to half a lemon worth.
- ginger to taste
- spearmint leaves from the garden

Combine all the ingredients except spearmint and blend until smooth. Pour into a bowl.

Roll the spearmint leaves between your fingers and then lay across top of bowl. Chill until nicely cold.

Clafoutis

Okay, initial reaction: this was incredible. Now next time I want to follow the directions because that would be mind-blowing.

What I made:

Ingredients:
- one large can pear halves, drained (seven halves)
- one apple, peeled and sliced
- 1/4 cup triple sec
- 2 teaspoons lemon juice
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 1 cup milk (I used unsweetened soy)
- 2 large eggs
- 1 egg white
- 1 pinch salt
- 2/3 cup unbleached flour

In large bowl, mix fruit, alcohol and lemon juice. Soak for at least one hour.

Preheat oven to 350. Take deep dish 10-inch pie plate and butter liberally. Sprinkle with 1 tablespoon of the sugar.

Arrange fruit on bottom of pie plate. Reserve liquid.

Take eggs and egg white and cream with the remaining sugar. Add remaining ingredients, including the reserved alcohol from the fruit. It will be runny, as this is more of a custard than a cake.

Bake about 50 minutes until the clafouti puffs and turns golden. It will deflate some once cooled.

Cool 20 minutes before serving. Best served warm.
