Summer Tartar Sauce and vegetarian fish sandwiches

My husband and I both came home from work exhausted so we made Gardein Fishless filets into sandwiches on Archer Farms take-and-bake baguettes with lettuce, cucumbers and homemade tartar sauce. I also added harissa to mine.



And I updated my tartar sauce recipe to be a tad lower fat, but just as tasty:

Mix, chill & serve...

• almost 3 tablespoons Hellman's light mayo
• 1 tablespoon lemon juice
• almost 1 tablespoon Dijon mustard
• 2 tablespoons Bolthouse Farms cilantro avocado yogurt dressing
• a teaspoon and a half fresh chives
• 2 dill pickle spears, diced very fine

Child in the kitchen

My daughter asked to make dinner tonight. She wanted to make something in a lemon butter sauce and she chose swai with peas and broccoli.

I asked her to blog about it but she refused.

Fish stick sandwiches

This morning I made mega smoothies-- bananas, strawberries, homemade almond butter, Carnation breakfast essentials vanilla flavor, almond milk and strawberry Noosa.

Lunch was salad wraps with Parmesan cheese and a side of baked potato sliced and smothered in butter, extra virgin olive oil, salt and garlic pepper.

Now, for dinner, I'm making fish stick sandwiches since my husband (who loves fish sticks) blames the child for their ending up in the cart at the grocery store.

Child will eat raw carrots as a side.

The sandwiches will be served on grocery store bakery bread, with romaine lettuce and homemade tartar sauce.

Today I used about:
- 1/4 or so Miracle Whip
- about 1 tablespoon lemon juice
- about 2 teaspoons honey mustard
- 2 dill pickle spears, diced, home canned from last summer's garden
- 3/4 teaspoon garlic pepper

Fish low-dairy pizza

I apologize in advance for not having a real recipe for this but I didn't know this was going to be the best pizza ever.

Before I went to get my daughter from her after school activity, I made one of my quick pizza crusts:
- 1.75 cups unbleached white flour
- 3/4 cup whole wheat flour
- 1 cup warm water
- 1+ tablespoon local raw honey
- 2 tablespoons yeast
- parsley
- oregano
- garlic pepper

Mix and set in warm place to rise for one hour.

When preparing the pizza, preheat oven to 450.

Take imitation crab meat and sauté in cast iron skillet in equal parts lemon juice and butter until slightly golden.

Remove to bowl.

In skillet, combine about 2 tablespoons flour with 2 tablespoons butter. When bubbly add about 1/2 cup soy milk and 1/2 cup skim milk. Set aside after warm and bubbly.

Press pizza into large jelly pan/cookie sheet.

Place fish on the pizza. Sprinkle with lots of fresh spinach and peas. Drizzle with the cream sauce.

Sprinkle about 3/4 cup shredded Italian cheeses and 1/4 cup shredded Parmesan across spinach.

Drizzle about 2 tablespoons ranch dressing across the pizza.

Bake 15-20 minutes.

Flounder with homemade tartar sauce

Today for Sunday dinner I made white rice, green beans almandine and Archer Farm lemon-chive flounder with homemade tartar sauce.

I got the fish on clearance, $2.48 for three servings. I made the tartar sauce on the back of the box, with modifications based on my family's preferences.

The original recipe:
- 1/2 cup mayo
- 2 tablespoons chopped pickle, relish or capers
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice

Mix and refrigerate

My version:
- 1/4 cup mayo
- 1 teaspoon fresh chives (chopped) from my garden
- 1 teaspoon fresh lemon thyme from my garden
- 1/2 dill pickle spear, chopped
- 2 teaspoons honey mustard (no other varieties in the house)
- 1 tablespoon lemon juice

I loved this sauce, so did my husband. That's amazing since I hate mayo and he hates mustard, citrus and pickles.
