Breakfast for dinner



I looked in the cupboards and in the fridge and felt uninspired. So, I started brainstorming with the family.

Soup. Something breakfasty. Pasta.

"Oh!" the child exclaims. "Breakfast for dinner."

Husband suggests omelets. I remember the fresh broccoli I bought at Target and all the cheese I have leftover from yesterday's spinach dip. And the last round of that HUGE bag of tator tots from Aldi.

Bingo.

Ingredients:
- leftover blueberry cobbler coffee in the carafe
- one teaspoon vegetable oil
- one teaspoon garlic powder
- two tablespoons fresh chives, chopped
- 1/2 teaspoon pepper
-1/2 teaspoon salt
- 2 tablespoons heavy cream
- 5 eggs, beaten
- ridiculous amounts of fresh broccoli
- 2 ounces sharp cheddar
- 2 ounces mozzarella
- tator tots

Preheat oven and cook tator tots while preparing eggs. In pan, spread oil, garlic and chives. Stir until chives are fragrant.

In separate bowl, combine eggs, cream, salt and pepper. Pour into very hot pan. Add broccoli, cover with cheese, fold when eggs solidify.

Serve with coffee, tots and a side of 50/50 Frank's Red Hot and ketchup for dipping tots.

My birthday dinner

For my birthday, I wanted pancakes. I chose Perkins for two reasons: 1. They have several flavors of syrup to liven up my soft food diet and 2. My husband and I hung out at Perkins a lot when we were dating in college. Not much else was open in the middle of the night.

I ordered a ham and bacon omelette, knowing they diced their ham tiny. The bacon was rather large and caused issues. Even though my extraction has healed nicely, I keep forgetting I have broken teeth yet and every time I try to chew I hit one of them. Argh!

The pancakes very much hit the spot and I washed it down with Cherry Coke. It was my birthday after all. Just having plates in front of me was sooooo emotionally soothing.

Broccoli omelettes




For dinner last night, I was starved. I called my husband from the office and said, "Make Food!"

He took the remaining everything bagels from the freezer, buttered them and layered them with frozen vegetables in cheese sauce and real cheddar cheese and baked them and topped them with bits of Morningstar vegetarian chicken nuggets. It was awesome! (And for dessert we had more pineapple tatin.)

For lunch today, I made a huge omelette of broccoli cheese and some cheddar, sprinkled with romano cheese. I served with sliced dates, tea and my 'flea shampoo potatoes' (sliced potatoes from a can cooked in oil, soy sauce and parsley).
