Salad

We're having salad for lunch since we plan on filling our bellies with rhubarb cobbler. :-)

Daughter wanted chicken soup, but we didn't have any but I found canned spaghetti and meatballs from when I could not chew. Gave her a side of romaine with cowgirl ranch dressing and my rye croutons, but she didn't like the dressing.

Husband and I are having big salads with croutons, sunflower seeds, broccoli and hot bacon dressing from his mom that I had in the freezer.

Vegetarian Provolone Garden Club Wrap

I made yummy vegetarian garden wraps today with Morningstar breakfast strips (bacon) and extra sharp provolone. I layered in them:
  • Romaine lettuce
  • carrots
  • cucumber (from the garden)
  • one strip Morningstar vegetarian bacon
  • extra sharp provolone
  • sunflower seeds
  • organic ranch dressing

Jessica's Feast



My dear friend Jessica's feast. She came over and made me (and my family) lunch.

- Romaine Lettuce, straight up, French style
- Incredible chicken salad made with organic chicken, coconut, mandarin oranges, craisins, blueberries and cucumber. YUM.
- a soft baguette. She likes them soft. I like them crusty. Almost sounds like we're talking about men, doesn't it?
- Brie

I provided:
- Beaujolais
- Rose iced tea
- Squares of Ghiradelli chocolate for dessert, some 60% dark, some expresso escape.

Salads with beef



The beef last night, for my first roast, came out admirably. I have a few thoughts on how to improve it should I repeat the experiment.

For breakfast today, we had big bowls of cream of wheat made with soymilk and served with lots of sliced strawberries.

Lunch was salads of romaine, iceberg, beef, peppercorn ranch with no MSG, carrots, broccoli, raisins and for me, some hot wasabi bar mix. Washed it down with apple-raspberry juice. And we're finishing off the guacamole with some multigrain tortilla chips.

Quesadilla

I wanted to make cheddar and bean quesadilla with my homemade guacamole last night but I didn't get there... We had salads with guac and chips instead.

Today for lunch I made the quesadillas: cheddar, velveeta, black beans and black olives, garnished with romaine lettuce, homemade guacamole, and mango salsa. And a side of strawberries.

The little one loves it, and while she insists at restaurants she does NOT like guacamole, she sure loves mine.

She even said to me when I served her, "This is guacamole?"
And I replied yes.
"But I don't like guacamole, but I love this!"

Salads on a budget



So, it's been a great food day here.

Breakfast was cream of wheat made with organic 2% milk and fresh sliced strawberries.

Then, an hour long bike ride.

Lunch was a feast of our favorites... gourmet salads and biscuit sandwiches.
My husband was lamenting that my vegetarian sausage (Morningstar breakfast patties) multigrain biscuits sounded yummy. So I made the last two sausages for him and my daughter and fried an egg for myself.

Then I prepped salads:

All salads received romaine lettuce (from the warehouse club), asiago (from Aldi), stilton with amaretto and dried fruits (my inlaws bought it at the warehouse club and couldn't figure out what to do with it), and cheddar. My daughter and I added raisins. My daughter picked Wegmans organic Caesar salad dressing, and I went with the sesame ginger vinaigrette (also from Wegmans) and then for my salad, the clincher, I added hot wasabi bar mix. Fabulous stuff!

I call this salad on a budget because I literally rooted around my cupboards and threw whatever I found in. If you've read a few entries in this blog, you'll already know that I rarely go to the store if it wasn't my plan. I substitute whatever I can, wherever I can.

I may include one of my oatmeal fruit cookies for dessert.
