Easy Buffalo Chicken Salad

This is great on a sandwich (as pictured) or on a big bed of lettuce as an actual salad.


This is a bit of a cheater recipe as I stated with Market Pantry chunk chicken breast in a can.

Ingredients:
* one can Market Pantry chicken breast, which I rinsed.
* I think it was one tablespoon Frank's Red Hot fiery buffalo wing sauce
* two tablespoons Bolthouse Farms blue cheese yogurt salad dressing (I love this stuff. Tastes great, and 35 calories per 2 tablespoons-- I splurged on the first bottle $3.99 at Target, but now it's on sale 2/$6)
* half a small red apple, peeled into ribbons
* somewhere around 1/4 cup shredded Parmesan cheese

I break my chicken into tiny mixes and mix it all up.

Winter Omelette

Another Snow Day.

So I made omelettes with a side of butternut squash "home fries."


The omelette (for 3)
- 4 eggs, some water
- 3 tablespoons bleu cheese
- 2 ultra thin slices of colby jack
- more than 1 cup spinach (maybe 2)
- about 1 cup peppers
- 2/3 cup dark meat chicken
- garlic pepper
- paprika 

Served with Bolthouse Farms blue cheese yogurt dressing.

The butternut squash... About 2 cups fried in 1 tablespoon butter, drizzled with 1 tablespoon maple syrup and sprinkled with cinnamon.

Expanding Salad

BEFORE
Since I work at Target café, I have a familiarity with our salads. I adore our California salads, which are made with romaine, blue cheese, walnuts, dried cherries, and poppyseed dressing. I think a vegetarian version of this salad would be awesome since the walnuts provide plenty of protein.

The directions for making salad instruct us to use "the black scoop" for cherries, walnuts and cheese, but we don't have a black scoop. When I asked what the measurement of the black scoop was, I was told to use my judgment.

One of my colleagues stuffs the salads so full that you can't eat them without emptying half the salad into another container.

Occasionally, I buy one of her salads and augment it with a bag of fresh spinach to make a meal for the four of us.

 The last time I did this, I spent $3.63 for the salad ($3.99 minus 10% team member discount and 5% red card discount) plus I spent $1.50 (pre discount) for the spinach, since it was on clearance. That's $5 for dinner.
