Breakfast for dinner
I looked in the cupboards and in the fridge and felt uninspired. So, I started brainstorming with the family.
Soup. Something breakfasty. Pasta.
"Oh!" the child exclaims. "Breakfast for dinner."
Husband suggests omelets. I remember the fresh broccoli I bought at Target and all the cheese I have leftover from yesterday's spinach dip. And the last round of that HUGE bag of tator tots from Aldi.
Bingo.
Ingredients:
- leftover blueberry cobbler coffee in the carafe
- one teaspoon vegetable oil
- one teaspoon garlic powder
- two tablespoons fresh chives, chopped
- 1/2 teaspoon pepper
-1/2 teaspoon salt
- 2 tablespoons heavy cream
- 5 eggs, beaten
- ridiculous amounts of fresh broccoli
- 2 ounces sharp cheddar
- 2 ounces mozzarella
- tator tots
Preheat oven and cook tator tots while preparing eggs. In pan, spread oil, garlic and chives. Stir until chives are fragrant.
In separate bowl, combine eggs, cream, salt and pepper. Pour into very hot pan. Add broccoli, cover with cheese, fold when eggs solidify.
Serve with coffee, tots and a side of 50/50 Frank's Red Hot and ketchup for dipping tots.

Update and Tator Tot Casserole.

I don't even know how I could have not updated this since Tuesday... Last night we had a 50% off coupon for our favorite Mexican restaurant, so today we had leftovers for lunch and fruity fred for breakfast. Somewhere on my camera, I have photos of Wednesday night's dinner which was Light Life Vegetarian stir-fry beef, sautéed in olive oil and soy sauce, sprinkled with oriental five spice and rolled into a warm wrap. With a side of fresh vegetables with dippings...
Now, I'm cooking some tator tots and I'm going to place them in a greased bread pan. I'm going to layer some thawed French cut green beans on top, with a hint of four-color pepper, and pour some Aldi brand Italian blend steam-in-bag vegetables with herb sauce.
Debating whether to add corn for sweetness...
I will probably add some crumbled boca burger for protein and cook it like a casserole. My family will love it.

Tuna and tator tots

The daughter came down with pink eye at 3 a.m.
Sigh.
My mom brought sticky buns this morning as part of a bribe to encourage me to do her taxes. It worked. It also made me sick to my stomach. All that sweetness.
For lunch we had tuna on homemade cinnamon raisin bread, with tator tots (which for me involved half ketchup and half Frank's Red Hot Buffalo Sauce.)
Hoping to get to Aldi this afternoon. Also aiming for Wegmans. High hopes I know.

Junk food craving

The other night I wanted a bag of Cool Ranch Doritos. They are my junk food of choice.
In their absence, my husband suggested tator tots. I decided it was worth a shot. I made them, sprinkled them with iodized sea salt and organic four-color pepper, and dipped them in a sauce made 50/50 of ketchup and Fran's Red Hot Buffalo sauce.

Misc.

It was a quick but hearty food day:
- Breakfast: Cream of wheat and sliced apples
- Lunch: Leftover pork, noodles, broccoli and beans from last night
- Dinner: (because Daddy's at a holiday party) scrambled eggs and tator tots with ketchup and a side of baby carrots with dressing. And blueberry juice to wash it down.

Appetizer Night

Okay, so tonight is appetizer for dinner night. (We're in hold over mode until grocery shopping Saturday morning) My husband's choice. He came home with:

- baby carrots
- some hamburger
- some vegetarian sausage patties
- Health is Wealth Broccoli and Cheese munchees
