Archer Farms Bacon Wrapped Roast Beef

This was my impulse buy at the store last night. Not make up or candy or a little something for the cats (cone shaped sisal scratching post, anyone?). Meat.


Discounted meat. Bacon wrapped roast beef, peppered. 

Serves about five if you go by the package. Three if you feed my family. The regular price is between $9.25 and $9.75 based on the weight of the roast.

The directions suggest tossing it in the crockpot with 1/4 cup water on low for 6-8 hours. We cooked ours about 6 1/2. It had reached an internal temperature of 165 degrees.

I tossed it Yukon gold potatoes, fresh broccoli and baby carrots.

Bacon wrapped dates

This morning I mixed cream cheese, cinnamon and raisins in my big Kitchen Aid mixer. 

I cut a bunch of fresh medjool dates in half, pitted them and smeared the cream cheese inside and put the lids back on.

Then we had the rest of the cream cheese with toasted baguette.




I wrapped the dates in raw bacon...


Baked at 450 for 15-20 minutes until the bacon cooks.

Easy dinners

This weekend groceries are low and I threw my back out hand-washing pizza pans at work. 

Last night my husband fried some hot dogs and tossed out some chips, made more palatable by special condiments like wasabi mustard and my own homemade pickles from dill that I grew in my own garden.

Tonight I made a sauce of garlic, sesame oil, honey and low sodium soy sauce for some frozen sugar snap peas. We served these with boxed mac and cheese made with coconut milk and adding bits of bacon leftover from a bacon-and-egg dinner Thursday night.

Meaty hot lunch

It's another day expected to tap out at a max of 90 degrees. Another day of errands, doctor's appointment and finally work at 5 p.m.

I slipped back to Market after my shift last night for lettuce and noticed a ton of meats going out that night-- the ones that say sell by or freeze the next day.

Guess who bought a mix?

Me.

Steak. Pork chops. Chicken breast. And my lunch today-- Angus beef sirloin medallions wrapped on bacon. And my lettuce. $17.54.

The sirloin I'm making for lunch normally sells for $9.79.

I'm cooking the beef and some roasted cauliflower for a main meal with the family at noon. That beats the heat and allows me to have a nice meal before an evening shift.

The basic premise for roasting cauliflower:
- wash
- preheat oven to 450
- break or cut into hunks no bigger than a golf ball.
- spread on a cookie sheet
- brush with olive oil
- sprinkle with salt
- cook for 35 to 45 minutes turning every 15 until browned in a speckled fashion. You want crispy.

Ravioli with bacon sauce

My husband had to work late unexpectedly and child has her dance lessons tonight so I whipped up this ravioli (spinach-portabello mushroom-cheese) with bacon sauce and broccoli.

I dropped the ravioli into boiling water, started a big bag of premium broccoli in the steam in bag and started the sauce in a small pot.

The sauce was two tablespoons butter, melted on low, with three strips bacon broken into bits. I added about a teaspoon of garlic pepper and a teaspoon of Italian herb seasoning.

When the ravioli finished, I placed them in a big bowl and poured the bacon sauce on them and stirred to mix. Next I topped with the broccoli and drizzled the broccoli with extra virgin olive oil.

I stirred everything heartily together and sprinkled some Parmesan cheese. I added sliced calamata olives and served.

Delightful. Really delightful.

Brussel sprout broccoli dish

I wanted to make this:

But ran out of Brussel sprouts, didn't have tarragon or pistachios and doubled the bacon.

I used 3 tablespoons of coconut oil since broccoli loves to suck up cooking fats...

But here we go:

In my cast iron skillet, sauté 12 ounces broccoli and about six ounces Brussel sprouts in 2 tablespoons coconut oil.

Sprinkle with generous garlic pepper, fresh ground black pepper and parsley. Add bacon broken into bits and another tablespoon coconut oil. Toss to coat.

Bake about 30 minutes at 375 adding cranberries in the last five or so minutes.

BLT

My husband made BLTs for lunch: bacon purchased at a local farmer, tomato given to us from someone's garden, lettuce and spinach on a bagel (mine was everything) that my mom brought from Dunkin Donuts. Of course, I had horseradish instead of mayonnaise.

Served with a side of sweet potato chips from Aldi.

Quick cucumber salad

It's 90 degrees at the sun has not abated. I wanted something quick and cool since I was low on time and high on the heat.

INGREDIENTS
- 1/2 cup store bought spinach dip
- 1 farmers market cucumber diced extremely tiny for my healing mouth
- about 1/4 cup bacon pieces (not bits, real pieces of bacon)

Stir and eat plain or in a wrap. Or with chicken salad. Or on crackers. Or with garden grown lettuce.

I liked it better plain than on a wrap. The wrap included some shredded mozzarella and Parmesan for added protein. Really didn't add anything.

I also had a side of leftover rice with spicy teriyaki sauce.

Grilled cheese with apples

Simple but hearty and flavorful. That was tonight's dinner.

Ingredients:
- butter
- wheat bread (two slices per person)
- one large apple, sliced
- two slices Morningstar breakfast strips (vegetarian bacon)
- extra sharp cheddar
- mozzarella
- Market pantry sweet potato fries

Put the fries in the oven.

Heat the Le Creuset skillet with a generous tablespoon of butter. Add the apples and cook until soft. Move to plate.

Heat vegetarian bacon.

Butter one side of bread, place in pan, layer with cheddar, then apples, then bacon, then mozzarella. Top with another slice of bread and make however you normally like your grilled cheese.

I burned mine, but they were so good my seven-year-old didn't care.

Salad

We're having salad for lunch since we plan on filling our bellies with rhubarb cobbler. :-)

Daughter wanted chicken soup, but we didn't have any but I found canned spaghetti and meatballs from when I could not chew. Gave her a side of romaine with cowgirl ranch dressing and my rye croutons, but she didn't like the dressing.

Husband and I are having big salads with croutons, sunflower seeds, broccoli and hot bacon dressing from his mom that I had in the freezer.

New Year Wegmans Indulgence

My mother gave us a $100 Wegmans gift card for Christmas, so today we went and bought some groceries, some of which were indulgences. We had an early lunch before leaving so at 2:30 we were ready for a snack.

For the adults: rainforest crunch whole bean coffee from fasig's with half and half
For the wee one: silk pumpkin spice milk (oh my! Delicious)

Vegetarian Provolone Garden Club Wrap

I made yummy vegetarian garden wraps today with Morningstar breakfast strips (bacon) and extra sharp provolone. I layered in them:
  • Romaine lettuce
  • carrots
  • cucumber (from the garden)
  • one strip Morningstar vegetarian bacon
  • extra sharp provolone
  • sunflower seeds
  • organic ranch dressing

Veg BLT


My in-laws left at 11:45 which left me 22 minutes to whip up lunch, when we're low on groceries and I strained my back.

I had my daughter help me whip up a batch of skillet biscuits, all with unbleached white flour as I'm out of my specialty flours of wheat and rye.

When my husband got home, he sliced a tomato from the garden for me and got the spring mix ready. My daughter got the mayo. I put a drop of olive oil in the small frying pan and dropped our last four slices of Morningstar Vegetarian bacon in the pan and covered them with a pinch of organic four color pepper.

We assembled the little sandwiches and they were yummy. For dessert we had warm biscuits with blackberry jam, and my daughter-- so enamored with these fluffy biscuits-- requested a THIRD, this one with peanut butter and jelly.

Four Cheese Vegetarian Crôque Monsieur


Ah... finally!

Adapted from Ina Garten's Barefoot in Paris:
Angel's four cheese vegetarian crôque monsieur
  • 12 slices homemade wheat bread (each about half the size of store-bought bread)
  • six slices Morningstar vegetarian bacon
  • 2 tablespoons butter
  • 3 tablespoons unbleached white flour
  • 2 cups hot heavy whipping cream
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground four color organic pepper
  • pinch nutmeg
  • 2 cups shredded swiss cheese (I got French Entremont)
  • 2 cups shredded sharp cheddar
  • less than 1/4 parmesan (I ran out)
  • 1 cup shredded smoked gouda
Preheat the oven to 400 degrees.

Melt the butter over low heat and add the flour all at once. Stir with a wooden spoon for two minutes (is it supposed to end up as a lump? Because mine does.) Slowly stir in all the milk (oops I did mine fast) and whisk until sauce thickens (mine did fine, even if I neglected the subtle nature of the instructions).

Remove from heat and add salt, pepper, nutmeg, parmesan, 1/4 cup cheddar, and 1/4 cup swiss.
Stir until melted and set aside.

Toast the bread about five minutes on each side in the oven.

On the bottom halves of the sandwiches, pile 1 tablespoon sauce, about a tablespoon shredded cheese (at this point I mix all remaining the cheeses together), one slice vegetarian bacon (folded), one more tablespoon cheese sauce, then the lid, one more tablespoon sauce, then a little pile of cheese.

Return sandwiches to the oven until bubbly and browned.

Prepare some frozen peas and cauliflower and top with leftover cheese sauce. The remaining cheese sauce can be refrigerated and used for a killer alfredo sauce, or more sandwiches, or a really decadent fondue.

Another crustless quiche


I had some milk product, some eggs and some cauliflower that needed using up, so I made a crustless quiche.

So:

  • 5 large eggs
  • 1 cup fresh half and half
  • 1 cup soy milk
  • 1/2 head cauliflower
  • 3 strips morningstar vegetarian bacon
  • 1.5 teaspoons extra virgin olive oil
  • 1/2 teaspoon garlic pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon nutmeg
  • 1 teaspoon parsley
  • about 2 ounces cheddar cheese
Beat the eggs and the milk products with the parsley. Preheat oven to 425. Heavily butter a deep-dish pie pan. In a skillet, combine oil, bacon, cauliflower and herbs/spices and cook briefly until they smell good.

Add to bottom of pie dish. Add cheddar, in crumbles. Pour egg mixture over top. Place in oven for 20 minutes, reduce heat to 300 and cook at least another half an hour until eggs set and toothpick in center comes out clean. Let stand 10 minutes.

Fancy dinner: Breaded Herb Pork





I have a small loaf of my homemade multigrain baquette in the oven thawing from the freezer... My daughter is arranging a platter of fresh veggies... I have French butter on the table and a nice place setting...

I have four thin boneless pork chops, that I breaded in a mix of breadcrumbs, parmesan cheese, seasonings from the spinach rigatoni from Aldi, four color peppercorn. I warmed some extra virgin olive oil in the skillet, with two shredded leaves of fresh sage and about two teaspoons of oregano. I cooked the prokchops over medium, for four minutes on each side. Then I put them in the oven with the bread to keep them warm.

Meanwhile, I have my daughter making some pepper ranch dip (for the veggies) Two teaspoons sour cream with an equal amount of ranch dressing, and some fresh ground four-pepper.

Now for the appetizer... I'm going to cook some veggie bacon and some dates in a bit of olive oil, then wrap them and put them in the oven. Debating whether or not to put some cream cheese in the dates first...

Okay... what I wrote before this point was written while cooking, so let's try to organize our thoughts better and present everything in a more manageable fashion.

First course: 'Bacon'-Wrapped Dates
Inspired by Gayle
Ingredients:
  • Six dates, in this case sliced in half. I used pitted dates from Aldi's that weren't exactly fresh, but they weren't exactly dried either
  • 1 tablespoon extra virgin olive oil
  • 6 slices Morningstar Vegetarian bacon
  • About 3 teaspoons Neufchâtel or Cream cheese
Heat oil and dates in skillet. Add bacon and cook until thawed but not crispy. Flip dates and heat primarily to soften. Remove bacon and dates from hot skillet. Spread cheese on half the dates and top with other half. Wrap in bacon. Broil on high in oven until the bacon browns.

These turned out fantastic. (On the bottom shelf in the oven.)

Second course: Crudités with tangy ranch dip
Using up leftover vegetables my mother-in-law brought Wednesday
In this case some broccoli, cauliflower, carrots, red pepper and green pepper
Ingredients for dip (combine and serve):
  • About two teaspoons sour cream
  • About two teaspoons ranch dressing
  • 1/2 teaspoon fresh ground four color peppercorns
  • about 3/4 teaspoon It's a Dilly
Main course: Herb-Parmesan Breaded Pork with corn and greenbeans
Ingredients for the pork (photo on top):
  • Four thin boneless pork chops
  • About 1 cup breadcrumbs
  • About 1 cup parmesan cheese
  • 1 teaspoon fresh ground pepper from four-color peppercorns
  • About 1/8 cup seasoning from the spinach rigatoni I buy at Aldi (it's cheese and Italian seasoning mostly)
  • One tablespoon extra virgin olive oil
  • One tablespoon butter
  • 2 leaves fresh sage, shredded
  • About three teaspoons fresh oregano
Combine the breadcrumbs, cheese, pepper and seasoning in a bowl and bread pork chops with it. Under medium heat, heat the oil and the sage and oregano. Add porkchops. Cook about 4 minutes, flip, add butter, and cook four more minutes.

For the vegetables:
I cooked the pork first and kept in hot in the oven. Then I wiped the pan and prepared the appetizers. Without cleaning the pan again, I dropped half a can of corn in (leftover from last night's casserole) and the rest of a bag of frozen French cut greenbeans. Cooked in the pan until warm.

Waffles for dinner


We had belgian waffles from the freezer, smoked bacon, and berry applesauce for dinner. We topped the waffles with real maple syrup and in some cases peanut butter. The house is running out of groceries, but it worked.
