Icy morning egg sandwich

My daughter has a two hour delay this morning so I made us a fried egg and roasted red pepper sandwich on a toasted jalapeƱo bagel. I sliced that puppy in half and we shared... I had fried up two eggs so we got plenty of good stuff to start our cold day.

She also got a side of tropical fruit (various papaya and pineapple) and pears.

I took:
- one Morningstar breakfast patty
- one homemade biscuit
- one squirt ketchup
- hearty thick smear of roasted red pepper dip (mouhammara)

Roasted Red Pepper veggies



So my daughter requested leftover chicken shawarma for lunch, part of the birthday feast we had from Forks Mediterranean Deli. Last night's feast was a near vegetarian delight, chicken shawarma being the only meat on the menu.

We had that seasoned bread that my former boss loved, hummus, cucumber yogurt salad, roasted red pepper dip, mini pitas, mango nectar and four different mediterrannean sandwiches: the falafel, tabouleh and feta, feta with black olive and cucumber (my new fav) and the shawarma.

I took some frozen cauliflower, carrots and broccoli and melted the following in a skillet to use the roasted red pepper dip as a sauce:
- one tablespoon butter
- one tablespoon olive oil
added:
-one heaping teaspoon red pepper dip
let that simmer and broke it apart so the flavors could get into the oil and butter
added:
- one heaping tablespoon fresh parsley from the garden
- one half teaspoon chives from the garden

added about two cups vegetables

Hummus lunch


Apparently my husband wanted hummus for the celery we had in the fridge, but didn't tell me until the stalks had gone limp. So, we're taking hummus (the roasted red pepper, parsley hummus I made yesterday) and Ritz crackers, pieces of everything bagels, and carrots.

Hummus


I hope I already posted my normal hummus recipe because today's was a thrown-together affair. I threw into the food processor:
  • one can chick peas. They should be drained well. I apparently did not drain mine well enough. So my hummus is a tad runny.
  • roasted red peppers. I added close to a cup
  • fresh parsley from the garden. Yeah, it's now November and I still have parsley growing in my backyard.
  • one large clove garlic
  • one tablespoon extra virgin olive oil
  • two tablespoons, or maybe a little more, lemon juice. The juice of half a fresh lemon might be perfect, but I don't have a lemon
  • one heaping teaspoon cashew butter. A whim.
And normally one would add tahini or toasted sesame seeds but I forgot them.
