Update


It may look like we've been slacking off in the food department, and I guess in many ways that's true.

Sunday, before we went to Build-A-Bear, I made the family open-faced little cracker sandwiches as an early lunch. Each vegetable cracker from Wegmans had a slice of deli ham and a hunk of extra-sharp cheddar. Very popular around here.

For dinner, we ended up going for an early dinner at Mex Tex Trio. For some reason, every time I eat there I crave Mexican for days until we go back and eat again. So much for scheduling family eating out nights. My husband and I both had burritos con mole and our daughter ate her weight in their salsa and had a chicken burrito.

For breakfast yesterday, my daughter and I had leftover Fred the Bread and Morningstar Vegetarian sausage patties. For lunch, my husband and I had leftover Mexican and I made our daughter nachos-- half a can of black beans, some shredded cheddar and some mango salsa also from Wegmans.

For dinner my husband made cheese ravioli with red sauce.

And for breakfast, my daughter requested something hot and I'm not feeling like a short order cook so I thought I could compensate for lack of vegetables and serve Veggie Patch Broccoli Cheese Bites for breakfast. Why not? They're hot.

Still surviving on leftovers


We used our new cheese board and utensils today for another cheese platter of brie, cheddar and commercial spinach artichoke heart dip with Wegmans vegetable and wheat characters, still leftover from my husband's holiday cheese platter at work. This was the portion he didn't take to the office, but still... getting very tired of cheese.

Soup and crackers

Still no homecooking, but I hope to get inspired before this evening. It looks like lunch will be at 2 p.m. today so we opted for a light lunch not to interfere with dinner.

V-8 Tomato Herb soup and whole wheat Toasted crackers...

We've never tried the soup before and the crackers are the last pack left from Nana's birthday party...

Italian Wedding Soup (from a can)


Thursday night was cold and rainy, so we had Italian Wedding soup out of a can with a side of cheddar and Ritz. The soup was from Wegmans, from a can.

Hummus lunch


Apparently my husband wanted hummus for the celery we had in the fridge, but didn't tell me until the stalks had gone limp. So, we're taking hummus (the roasted red pepper, parsley hummus I made yesterday) and Ritz crackers, pieces of everything bagels, and carrots.

I can home from the library meeting the other night hungry, so my husband made this lovely cheese and cracker platter with cheddar, Ritz-style crackers, horseradish mustard and grapes.

Cucumber sandwiches


Because of our trip to the farm this morning, and the offerings from my mother's garden... We opted for cucumber sandwiches for lunch. This works out especially well because my mother-in-law gave us a variety of crackers leftover (and unopened) from my grandmother-in-law's 90th birthday last weekend.

Mimi, my mother, brought us a cucumber from her garden yesterday and there's only two ways I like cucumbers: in a salad or on these sandwiches.

We served with fresh blueberries my father-in-law picked last week and blueberry yogurt smoothie from Klein farm.

Angel's Cucumber Sandwiches (perfect for a tea party or summer lunch)
Ingredients
  • 1 cucumber sliced
  • Some variety of spreadable cheese, vegan cream cheese, or cream cheese. (Today we used lemon pepper cheese spread from Klein farm)
  • Crackers (wheat thins, triscuits, Ritz, whatever)
  • It's a Dilly Seasoning (A McCormick product with onion, garlic, dill, lemon and jalapeno pepper. Salt free)
Take one cracker, spread with cheese, top with cucumber, sprinkle it's a dilly on top. I prefer mine open faced. My daughter and husband both prefer lids.

What happened?


I've been home, with no work, and somehow my culinary abilities/housework are not in use. Yesterday I had a conference call/webinar for the office at noon, so I whipped up an odd little lunch to keep the family fed and quiet.

The husband got pepper jack cheese, Aldi brand Ritz-style crackers, chips, and my special banana treat.

My daughter got what I call a "kiddie sandwich" which my husband thought was gross and the kid adored. I took two crackers and placed them side-by-side. I added ketchup to each, then a slice of cheddar cheese across both, and put two more crackers on top and called it a "train."

The banana treat... Well, the bananas are getting overripe so I sliced them. topped with peanut butter and added raisins to make faces.

This lunch was meant to be fun... and it was.

Un-Chicken Parm


My husband once again saves the day. This whole week is a blur for me and eating has not entered my mind as a priority. I thawed out a loaf of homemade French bread. That was my contribution. My husband made tuna with soy mayonnaise and crackers (the funky gluten free multi-grain or ritz I wonder) for lunch. And carrot sticks. For dinner, he made "chicken" parm with Morningstar Chik'n Patties, cheese, Wegmans pizza sauce and the homemade bread. He cooked some mixed veggies in seasoning (probably garlic pepper and a touch of butter) and voilĂ .

Good news is that the budget post-home disaster (we had a minor flood a month ago) has recuperated and I might be able to go to the grocery store soon! And I expect this week to be nutty, and full of bad food, but next week (fingers crossed) we'll get back on track.
