Last night our favorite ice cream shop had its spring reopening. So by 4 p.m. (after dismissal from school) my whole family headed to The Purple Cow Creamery where we stuffed ourselves with lots of ice cream.
And had no room for dinner. So dinner became rice with a touch of V8 broccoli soup as sauce and snow peas.

Hurricane Chicken (in lemon butter sauce)
To get ready for the storm, we put the following in the crock pot:
- 3 pounds chicken thighs
- 2 pounds drumsticks
- juice of 2.5 large lemons
- drizzle of olive oil
- 1 stick of butter
- 1 bag snow peas
- fresh ground pepper
- water to fill crockpot
My husband liked it as is, but I would have preferred the water greatly reduced for better butter flavor.

Chicken "Stir Fry"

My daughter had the last of my mother's meatballs and sausages in red sauce for lunch, with an apple and some fritos.
My husband and I had my mom's leftover rice curry. BUT my husband used the last of the vegetarian Morningstar Chikn Nuggets and I had planned to make those into chicken stir-fry with the microwaveable/steam in bag vegetables and concoct some sort of Asian-style sesame sauce. I didn't get to the sauce. My husband felt bad about using the nuggets, so he chopped up one chicken breast from the freezer and fried it. We served with brown rice and some low-sodium soy sauce.
