Pork in orange sauce

This is a variation of pork with peaches and snap peas, the original recipe passed to me from my college roommate.


The sauce, which is added with whatever nuts you want (cashews or peanuts recommended) after the vegetables and meat are cooked, consists of:

- 1/2 cup fresh squeezed juice of clementines
- 1/4 cup corn cob jelly
- 1 tablespoon corn starch
- 2 indivudual serving cups of diced mango
- 2 tablespoons reduced sodium soy sauce
- 2 teaspoons ground ginger

Cranberry relish

In the food processor combine:
- 12 ounces fresh cranberries
- 3/4 teaspoon almond extract
- 5 small clementines cut into chunks
- 1/4 cup local raw honey
- almost one cup sugar
- almost one cup raw almonds

Chill for several hours. 

I'm going to can this. For Christmas.
