Yummy Yummy Taco Salad

While I walked our daughter to school in some very nasty wind, my husband made this incredible salad:

• organic spring mix
• black beans
• black olives
• New York Extra Sharp Cheddar
• tortilla chips (broken)

with a dressing of

• sour cream
• mango salsa
