We used our new cheese board and utensils today for another cheese platter of brie, cheddar and commercial spinach artichoke heart dip with Wegmans vegetable and wheat characters, still leftover from my husband's holiday cheese platter at work. This was the portion he didn't take to the office, but still... getting very tired of cheese.
As long as you cook with it, cheese freezes well. I usually grind before freezing and put it in 1 cup portions (either zipper bags or containers. Zipper bags actually work better for cheese. You can get most of the air out. When I was little my mom had a food vacuum. That thing was excellent!)
ReplyDeleteSince you're on school break, you could make some of your famous on a shoestring budget hearty meals. Make doubles and put half in the freezer for when you are back to crazy schedule, they'll be heat and eat!
Besides, cooking makes you happy.
